Casserole Al Pastor
Talk about a weeknight winner! All of your favorite Tex-Mex ingredients baked into one tasty casserole, featuring Distilled Al Pastor!
INGREDIENTS
8 ounces lean ground beef
1 tablespoon Distilled Al Pastor
1 10-ounce can diced tomatoes and green chilies, drained
1 2 1/2-ounce can sliced olives
1 10-ounce bag frozen riced cauliflower, thawed
1 10-ounce bag frozen corn, thawed
1 teaspoon salt
8 ounces shredded Mexican cheese blend
Nonstick cooking spray
Chopped green onions, Mexican crema and hot sauce, for serving
INSTRUCTIONS
Preheat oven to 350F.
Add the ground beef to a medium skillet. Season with Distilled Al Pastor and cook over medium high, 4-5 minutes, until brown.
Drain ground beef on a paper towel to absorb excess grease; then transfer the beef to a large bowl.
To the ground beef, add tomatoes and green chiles, olives, cauliflower, corn, salt and cheese; mix to combine.
Apply a thin layer of cooking spray to an 8x8 baking dish. Transfer mixture to prepared dish and bake for 30 minutes.
Serve with green onions, Mexican crema and hot sauce.
