Pomodoro Chicken Crostini

This is one of those "the portion is too big for an appetizer so let's call it an entree" kind of recipes - OR have some friends over and it's an app again!

INGREDIENTS

1 hoagie roll, sliced into 14 rounds

1 tablespoon olive oil

6 ounces chicken, finely chopped

1 teaspoon garlic paste

1/2 cup marinara

1 cup shredded mozzarella

1 tablespoon Distilled Pomodoro

1/4 cup grated Parmesan

Chopped parsley, for garnish

INSTRUCTIONS

  1. Preheat oven to 375F. Spread the hoagie slices on a baking sheet.

  2. Brush a thin layer of olive oil on each hoagie slice.

  3. In a medium bowl, combine chicken, garlic paste, marinara, mozzarella and Distilled Pomodoro.

  4. Place an equal amount of chicken on each hoagie slice.

  5. Top the chicken mixture with a sprinkle of Parmesan and bake for 10 minutes.

  6. To serve, garnish with chopped parsley.
