Skinny Queso

Cottage cheese is the new Greek yogurt and it is the secret to this slimmed down queso. And that means you can double up your portions!

INGREDIENTS

16 ounces full fat cottage cheese

2 tablespoons Distilled Al Pastor

1 1/2 cups shredded Mexican cheese blend

2 tablespoons pico de gallo

INSTRUCTIONS

  1. Combine cottage cheese, Al Pastor and cheese in a microwavable bowl.

  2. Microwave until warm, 1-3 minutes, stirring every 30 seconds.

  3. Transfer mixture to a blender and blend until smooth.

  4. Transfer queso to bowl and add 2 tablespoons of pico de gallo. Stir to combine.

  5. Garnish the top with remaining tablespoon of pico de gallo and serve with chips.
