Creamy Pomodoro Pasta Salad
Two recipes in one - tortellini, celery, shallots and broccolini dressed in Creamy Pomodoro, our brand new salad dressing featuring Distilled Pomodoro!
INGREDIENTS
2 tablespoons white wine vinegar
1 tablespoon lemon juice
2 tablespoons extra virgin olive oil
1/4 cup mayonnaise
1/2 teaspoon minced garlic
1 teaspoon Distilled Pomodoro
1 teaspoon honey
2 tablespoons grated Parmesan
1/4 teaspoon salt
1/4 teaspoon pepper
3 cups cooked cheese tortellini
1/4 cup diced celery
3 ounces blanched, chopped broccolini
2 tablespoons minced shallot
3 ounces diced Canadian bacon
INSTRUCTIONS
In a small bowl, whisk vinegar, lemon juice, olive oil, mayonnaise, garlic, Distilled Pomodoro, honey, Parmesan, salt and pepper until well combined; set aside.
In a medium bowl, combine remaining remaining ingredients, followed by the dressing. Toss well to coat all ingredients in the dressing.
Refigerate pasta salad for 30 minutes before serving, tossing at the halfway point.
