Codburgers
Delicate white fish patties, seasoned to perfection, with peppers, onions and parsley.
Ingredients
1 pound fresh cod fillet
2 tablespoons olive oil
1/2 cup diced red bell pepper
1/2 cubed diced onion
2 teaspoons Distilled Limoncello Pepper
1 teaspoon Dijon mustard
2 tablespoons finely chopped Italian parsley
1/4 cup breadcrumbs
1 egg
2 tablespoons vegetable oil
Instructions
Pat the cod dry and cut into chunks. Transfer cod to a food processor and pulse until finely chopped; set aside.
Heat 1 tablespoon of olive oil in a skillet over medium heat. Sauté the peppers and onions for 4-5 minutes, until soft.
Cool peppers and onions for 5 minutes, then transfer to a large bowl. Add the remaining tablespoon of olive oil, Distilled Limoncello Pepper, mustard, parsley, breadcrumbs, and egg; stir well to combine.
Add the cod and gently mix until all the ingredients are incorporated. Refrigerate the mixture for 30 minutes.
Form 5 patties. Add 2 tablespoons of vegetable oil to a skillet over medium heat. Fry patties for 3-4 minutes per side, until golden brown.
