Tuna Melt Fritters

Tuna melts for carb lovers? You got it! Even if you're not in a fritter mood, Distilled Limoncello Pepper adds WOW to to your tuna salad and that's reason to celebrate!

INGREDIENTS

12 ounces canned tuna, drained

3 tablespoons chopped red onion

3/4 cup shredded cheddar cheese

2 eggs, beaten

3 tablespoons chopped parsley

1/4 cup mayonnaise

1 teaspoon Distilled Limoncello Pepper

1/2 teaspoon salt

1 tablespoon olive oil

Lemon wedges and Limoncello Pepper Mayonnaise, for garnish

INSTRUCTIONS

  1. In a medium bowl, mash tuna with a fork to an even consistency.

  2. Add onion, cheese, eggs, parsley, mayonnaise, Distilled Limoncello Pepper and salt. Mix well.

  3. Form 10 fritters, 1/4 cup each, and refrigerate for 30 minutes.

  4. Add olive oil to a nonstick pan over medium low. Add fritters to the pan, flatten slightly, and cook 3-4 minutes per side, until golden.

  5. Serve with Limoncello Pepper Mayonnaise and lemon wedges.
