Mojito Pudding Bread

A deliciously moist cake in loaf form that come together in a snap! Perfect for brunch, over coffee, and your nexr midnight snack!

Ingredients

Nonstick cooking spray 

3/4 cup granulated sugar 

2 eggs 

1/2 cup unsalted butter, melted 

2/3 cup milk 

1 package cheesecake pudding mix (99g) 

1/4 teaspoon salt 

2 tablespoons Distilled Mojito 

1 teaspoon baking powder 

1 1/2 cups all purpose flour 

1/2 cup powdered sugar 

1 tablespoon milk 

1 tablespoon lime zest 

Instructions

  1. Preheat oven to 350F. 

  2. Apply a thin layer of nonstick cooking spray to the inside of a loaf pan. 

  3. In a large mixing bowl, combine granulated sugar, eggs, and butter until well mixed.

  4. Add milk, pudding mix, salt, Distilled Mojito and baking powder and stir to combine.

  5. Gently fold the flour into the batter until the there are no clumps.

  6. Pour the batter into the loaf pan and bake for 40-50 minutes, until fully baked. Allow the bread to cool for 10 minutes. 

  7. To make the icing, combine powdered sugar, milk and lime zest. Pour over the top of the bread and serve.
